Kilikoodu
A tasty snack from the tantalizing spread of Malabar, Kilikoodu takes its name from the way it looks - a sparrow’s or a bird’s nest. It has a crunchy twist with a dash of spices and the very shape of this snack is quite appetizing. You can have a vegetarian and a non-vegetarian version of this dish. Mostly, the preference is for the non-vegetarian variety. It tastes like a cutlet, but the crunchiness and the mix of meat, spices and oil take this dish to another level. It is one of the most popular snacks prepared during Ramzan and Eid.
With all its delicious appeal, Kilikoodu has a simple way of preparation. The chicken is cooked and set aside. The potatoes are cooked and mashed and then spiced with pepper, masala and salt. Egg, corn flour is added to this mix. Then, onions are sauteed in oil. Ginger garlic paste, turmeric, chillies and coriander are added and sauteed. The shredded chicken is added to the mixture. Now the potato mix is flattened, and a scoop of cooked chicken placed on it. After the mashed potato film is wrapped around the chicken-mix, it is dipped in a beaten egg mix, and rolled with roasted vermicelli. These balls are deep fried and the delicious Kilikoodu is ready.
