A base of smooth rice interspersed with crunchy cashew nuts and thick ghee, swimming in pure coconut milk, is not a delicacy that many can resist. This is Ada Pradhaman, the delectable dessert of God’s Own Country which plays a prominent part in the popular vegetarian feast, the Sadya. The recipe below is a favourite on our shores and will surely be adored in your own homes too.
Ingredients
Ada - 50 g
Jaggery - 150 g
Coconut Milk - 250 ml
Sultanas - 25 g
Cashew nuts - 25 g
Ghee - 50 ml
Cardamom Powder - 05 g
Coconut - 10 g
Method of Preparation
Parboil the ada and drain the water thoroughly. Make a syrup with jaggery and water and strain through a muslin cloth. Add the ada to the syrup and cook it well. Add the coconut milk, cardamom powder and just heat but do not boil. Finish with fried sultanas, cashew nuts and coconut.
