Irachi Pathal is a non vegetarian beef curry from Malabar Cuisine.
Ingredients
Beef - 200 g
Red chilli powder - 2 tsp
Turmeric powder - ¼ tsp
Coriander powder - 1 tsp
Garam masala - ¼ tsp
Fennel seed - ¼ tsp
Ginger - 1 pod
Garlic - 2 tsp
Onion (chopped) - 1
Green chilli - 2 or 3
Curry leaves
Coconut oil - 3 tsp
Salt - to taste
Parboiled rice dough - ¼ kg
Coconut (grated) - 1 cup
Cumin seed - ¼ tsp
Method of preparation
Heat some coconut oil in a pan. Next, add cumin seed, garlic, chopped ginger, green chilli and some curry leaves. Stir well. Now add the grated coconut and stir well. Into this put chopped onions and some salt. Continue stirring. You may now add powdered turmeric, red chilli and cumin seed and meat masala. Stir well. It is now time to add the pieces of beef. Mix the ingredients well. Pour some water and stir. Allow the ingredients to cook for some time.
For making the rice dough, soak the rice for two hours and then grind it by adding small amount of water. Take a small ball of rice dough and spread it like a disc on an oiled plantain leaf. Make one more like that. Now fill the surface of one of the rice dough discs with the beef preparation and cover it with the other and then steam it for about 15 to 20 minutes.
Gently take out the Irachi Pathal from the steamer. It is now all done and ready for you to enjoy yet another dish from Malabar.
