Ingredients
Mutton (cooked with 1/2 tsp Turmeric powder and salt) - 500 gm
Cardamom - 15 nos
Shallots sliced - 100 gm
Salt
Coconut oil - 3 tbsp
Mustard seeds - 1/2 tsp
Curry leaves
Masala paste - 5 tsp
For Masala paste
Chilli powder - 2 tsp
Coriander powder - 2 tsp
Pepper powder - 1 tsp
Turmeric powder - 1/2 tsp
Fennel seeds - 1/2 tsp
Ginger juliennes - 1 tsp
Garlic chopped - 1 tsp
Cloves - 8
Cinnamon - 5 gm
Method of preparation
Make a fine masala paste using ginger, garlic, turmeric powder, coriander powder, red chilli powder, cinnamon, clove and fennel and keep it aside. Cook the mutton with a pinch of turmeric powder and salt. Heat some oil in a pan. Splutter mustard seeds with cardamom. To this, add some curry leaves and chopped shallots. Saute till the shallots turn golden brown. Add the masala paste prepared before, and mix well. Add cooked mutton and salt if required. Cook for some time keeping the pan covered. Add some more curry leaves and oil. Mix well and transfer it to a serving bowl. The spicy Malabar mutton curry is ready.
