Vegetable Manga Mappas brings together the tangy taste of raw mango with a plethora of healthy ingredients like carrots, cauliflower and beans. This special mix acts as an excellent side dish to any main course meal, with a cooking method that has gained traction with a lot of our visitors lately. The recipe below details the way to go about recreating this healthy and delicious savoury dish in your own kitchen.
Ingredients
Raw Mango - 1 no.
Carrots - 150 g.
Beans - 100 g.
Cauliflower - 150 g.
Potato - 100 g.
Green Peas - 75 g.
Onions - 75 g.
Green Chilli - 20 g.
Ginger - 10 g.
Garlic - 15 g.
Curry Leaves - 10 g.
Green Cardamom - 3 g.
Cinnamon - a small stick
Cloves - 2 g.
Red Chilli Powder - 0.5 tsp.
Turmeric Powder - 0.25 tsp.
Coconut Milk (I extract) - 150 ml.
Coconut Milk (II extract) - 100 ml.
Mustard Seeds - 2 g.
Coconut Oil - 15 ml.
Method of Preparation
Clean, wash and string the beans, then peel the carrots and potato. Cut the cauliflower into small florets. Cut the beans, carrots & potatoes into one-inch dices. Boil & strain. In a saucepan heat coconut oil. Add mustard seeds and wait till they crackle. Add cardamom, cinnamon & cloves.
Add sliced onions, slit green chillies, chopped ginger & garlic and sauté till the onions become pink in colour. Add curry leaves, red chilli powder and turmeric powder. Now add the second extract of coconut milk with the boiled vegetables. Then add the peeled diced mango. Reduce the flame and add the first extract of coconut milk and cook till the gravy thickens. Add salt to taste, adjust the seasonings and serve hot.
