This is the video of pappadam thoran. The pappadam - the appalam in Tamil Nadu and the pappad in the Hindi belt - is a ready to fry round wafer made of black gram flour that's been around for ages. Though there was a time when they were made from scratch at homes, for a long time now, it's been one of those things that you pick up from the nearest provision store.
Usually, the pappadams are either fried or grilled. Innovative cooks - very innovative cooks, I must say - have created a number of dishes with the pappadam as the main ingredient like the pappadam thoran, a side-dish, which you will see soon, and the pappadam ozhichucurry.
But if you are a Malayali, just don't try any of them on your grandparents, unless there's isn't a thing in the fridge!
So…you will need, 15 pappadams, a cup pf grated coconut, four green chillies, four small onions, two dry red chillies, half a tsp of mustard seeds, ¼ of a cup of coconut oil, curry leaves and salt.
Ingredients
Pappadam - 15
Coconut (grated) - 1 cup
Green chillies - 4
Red chillies - 2
Small onions - 4 (finely chopped for seasoning)
Coconut oil - ¼ cup
Mustard seeds - ½ tsp
Curry leaves
Salt
Method of preparation
Pound the grated coconut with the green chillies, curry leaves and small onions in a mixer bowl. Fry the pappadams lightly - the usual way - and then crush them. Now add salt and the coconut mixture to it and mix. Splutter the mustard seeds and then saute the dry red chillies, chopped small onions and curry leaves. Add the pappadam-coconut mixture and mix well. Lower the flame and cook till done.
