Visits to regional cuisine behemoths across India are never complete without tasting the scrumptious Pappadam. This round wafer made of black gram flour, either grilled or fried, is a staple seen with different meals across the country. In Kerala, we have our twist to this beloved snack, with a special thoran that imbibes many of the local ingredients that add to its appeal. This dish is an absolute joy to eat, and the recipe below is sure to be a hit in your own household as well.
Ingredients
Pappadam - 15
Coconut (grated) - 1 cup
Green Chillies - 4
Red Chillies - 2
Small Onions - 4 (finely chopped for seasoning)
Coconut Oil - ¼ cup
Mustard Seeds - ½ tsp.
Curry Leaves
Salt
Method of Preparation
Pound the grated coconut with the green chillies, curry leaves and small onions in a mixer bowl. Fry the pappadams lightly - the usual way - and then crush them. Now add salt and the coconut mixture to it and mix. Splutter the mustard seeds and then sauté the dry red chillies, chopped small onions and curry leaves. Add the pappadam-coconut mixture and mix well. Lower the flame and cook till done.
