Tender Coconut Pudding


‘Like a soft piece of heaven, melting in your mouth’; this tends to bethe most common description given to tender coconut pudding as its vivid yet delicate flavours take your taste buds on a beautiful odyssey. It is a dish that is loved throughout the State. With a remarkably high nutritional content, it is light on the stomach yet extremely healthy. Here we provide you with the method of recreatingthis beloved dessert at home. 
 
Ingredients
Tender Coconut Pulp - 2 cups
Tender Coconut Water- 2 cups
China grass- 10 gms
Milkmaid- 1 tin
Milk- 1 ½ cup
Water- ½ glass
Sugar- 4 tbsp
Coconut (grated)- ½ cup
Sliced Cherries- ¼ cup

Method of Preparation
Coarsely grind the tender coconut pulp and coconut water and keep aside. Now add the milk to the milkmaid along with 2tbsp sugar and boil it and keep aside. Soak the china grass in ½ glass water for 15 minutes. Double boil the china grass in a bowl till it dissolves completely. Mix the china grass into the milk-milkmaid mixture. Make sure you mix these when both the milk and china grass solutions are hot. Let the mixture cool. Now add the tender coconut pulp mixture into the now cool milk mixture and blend well. Keep aside for 20 minutes.

Heat a pan and put the grated coconut and 2 tbsp sugar. Fry it on a low flame till it starts to turn brown. Garnish the pudding with the fried coconuts and cherries. Refrigerate it for 3 hours so that the pudding may set well. Now you may relish the flavour of God’s Own Country as the rich taste of tender coconuts conquers your senses.
