Appam
Appam, also locally known as Palappam, is a fascinating breakfast dish from God’s Own Country. These lacy, fluffy pancakes or hoppers are made from a batter made of ground fermented rice and coconut. Thin and crispy on the edges with a soft, fluffy centre, appams are a delicate dish with the aroma and flavour of coconut, taking the dish to an all-new level. A perfect balance of the slight sweetness of the coconut milk and subtle tang of fermentation in the appam makes them irresistible. These taste best when paired with egg curry, vegetable stew or even meat-based stews.
