Pavakka Varuthathu or Bitter gourd fry
Pavakka Varuthathu or Bitter Gourd Fry may at first seem like a surprising concoction due to its inherent bitter flavour. But this dish, in its Kerala cuisine avatar, will definitely surprise you. The sourness you expect is replaced by a powerful spice mix, which is balanced out by the unique texture of the coconut. This vegetarian delicacy is sure to be a smashing hit at home. Ingredients Bitter Gourd (cut into thin slices) - 2 cups Thinly Sliced Coconut Pieces - ½ cup Green Chillies (cut into long slices) -4 Chilli Powder - 1 tsp. Turmeric Powder - ½ tsp. Coconut or Canola Oil (for frying) Salt Method of Preparation Wash the gourd slices and drain the water completely. Now add chilli powder, green chillies, coconut pieces, turmeric powder and salt and mix well with your hand. Keep this aside for a few minutes. After that, you can fry the bitter gourd on a low flame till they turn crispy and light brown in colour. This dish tastes great with rice.
