Pavakka Varuthathu or Bitter Gourd Fry may at first seem like a surprising concoction due to its inherent bitter flavour. But this dish, in its Kerala cuisine avatar, will definitely surprise you. The sourness you expect is replaced by a powerful spice mix, which is balanced out by the unique texture of the coconut. This vegetarian delicacy is sure to be a smashing hit at home.

Bitter Gourd (cut into thin slices) - 2 cups
Thinly Sliced Coconut Pieces - ½ cup
Green Chillies (cut into long slices) -4
Chilli Powder - 1 tsp.
