Kallumakkaya Nirachathu or Stuffed Mussels
Kallumakkaya Nirachathu or Stuffed Mussels are another feather in the cap of Malabar cuisine. The fragrance of delicately spiced mussels along with the fresh taste of the seafood makes for an exquisite combination. Imported directly from the households of North Kerala where it was perfected, below lies the recipe for this culinary masterpiece. Ingredients Cleaned Kallumakkaya (Mussels) - 7 piece A mixture of soaked rice, coconut, sweet cumin and onion. [For making the mixture: Soaked rice – 1 cup, coconut – ¼ cup, sweet cumin – ½ tsp. and onion-3. Grind it well.] Chilli powder - 3 tsp. Turmeric powder - ½ tsp. Coconut oil - 2 tbs. Salt to taste Method of Preparation Fill the mixture of soaked rice, coconut, sweet cumin and onion into cleaned Kallumakkaya with shell and boil it in an Appachembu (a kitchen ware). Make a paste of chilli powder, turmeric powder, salt and water in another bowl. When the Kallumakkaya with the mixture boils, separate the Kallumakkaya from the shell. Heat a pan and pour in some coconut oil. Mix the Kallumakkaya with the paste and fry. Delicious Kallumakkaya is ready to be served.
