Uzhunnu Vada
Ingredients White whole urad dal - 1 cup Shallots (chopped) - 1 cup Peppercorns - 10 Soda powder - half tsp Green chilli (chopped) - 2 Rice flour - 1 tbsp Ginger grated - 1 tbsp Curry leaves Salt Oil Method of preparation Soak white whole urad dal for atleast 2 hours. Grind it to a thick, fluffy, smooth batter using minimal water. To it add rice flour, soda powder, pepper corns, chopped shallots, chopped green chillies, grated ginger, chopped curry leaves and salt. Mix well. Heat oil in a pan. Wet fingers and take a small scoop of the batter. Roll it gently and with your thumb poke a hole and gently drop it into the hot oil. Repeat the process, wetting fingers before taking each scoop. Fry till golden brown and crisp on both sides. Take it out of oil and put it on a strainer to let the excess oil drain off.
